here is a litle challange i whant to take part in

im using this pic of this passion flower i found the summer before i moved to norge ,it was inside a lite greenhouse caffee ,i took my kids there with my mom ( she was moving to norge as well and we where saying goodbye )so this flower reminds me of that time ,hard to say goodbuy but this pretty flowers makes me think of my mom so thats why i whant to choose this pic for this .

Well now its almost time for the judges to take over the miss cupcake top 20 ,im really happy with how many likes i have gotten on my cake ,thanks to everyone that gave me there like ,i really appreciate every like i have gotten .

End of May

well this month is almost over and June is around the corner.
I need more sun so im ready for summer thank you bring it on
i can get lost in pretty things i see in the blog world ,oh my so many pretty things out there

Chocolate buns

This is last blog in this month.We had lots of guest´s yesterday so to have something tasty for them i made these chocolate buns and boy are they good and just the best buns ever i think.

very soft and fluffy buns are the best ,the recipe is very big but in a big house you need BIG

• 900-1000 gram hveteml ,flour
• 5 dl melk (ca 30 grader) ,milk warm
• 25-50 gram gjær ,yeast depends on how long you leave the dough to rest ,i used 40 gr and left it for almost an hour
• 150 gram sukker ,sugar
• 1 ts kardemomme,cardimon
• 1/4 ts salt
• 1 egg
• 150 gram smør, i terninger ,butter in bits

• kokesjokolade, finhakket ,chocolate chopped small
• brunt sukker ,brown sugar
• smør ,butter
• kanel,cinamon

but everything (not the butter) in the mixer and mix very well  then add the butter in small pices at a time and mix good ,then let the dough rest for an hour or so with a plastinc film over it (in a warm spot) i put in top of the stove while im heating the oven

Nice sunday

Its a cozy sunday here ,the hubby working on some things for me and we had some guest´s and yeh i baked some chocolate buns .

Made these as desert for the family ,easy and tasted wonderful.

here is the meringue recipe

FOR THE MERINGUE NESTS

• 3 egg whites
• ½ tsp lemon juice
• 150g caster sugar 
•  
• Heat oven to 110C/fan 90C/gas ¼. Tip the egg whites and lemon juice into the clean bowl of a food mixer. Whisk until the whites double in volume and hold a peak when the whisk is drawn through them. Keep the whisk running and add the sugar a tbsp at a time, incorporating completely before adding the next. Whisk until all the sugar has been added and the whites are glossy.
• Place a square of baking parchment on a large baking sheet. Pencil nine circles, about 7cm each, onto the parchment. Spoon the meringue into a large piping bag fitted with a plain nozzle and pipe concentric rounds to fit each drawn circle, piping two or more rings around the edge to form a nest. Bake for 2 hrs until they are crisp and lift off the paper easily. Leave to cool completely.

the filling

• 250g Original Philadelphia
• 50g icing sugar
• ½tsp vanilla extract
• 400g fresh strawberries
• 8 meringue nests, either homemade or shop bought.
• Approx 80g strawberry dessert sauce

Method

1. Whisk together the Philadelphia, icing sugar and vanilla extract.
2. Roughly chop the strawberries into small bite size pieces and stir into the Philadelphia mixture. Divide this evenly between the meringue nests.
3. Drizzle the dessert sauce over the nests and if you like dust with a little icing sugar. Best served straight away.                                                                                                                                                     

Chocolate cake

On sunday we had so much to do around the house and we got guest as well so i made a cake and it was delicious everyone loved the cream on top and the cake was very moist and i will for sure make that one again .

Its poring rain today so im not really sure what im gona do ,maby some thing around the house ,more laundry boring i know but someone has to do it .

 I wish i had some cake left ,then i would snuggle under a blanket with my son and watch some tv and eat a litle cake .No im trying to watch my diet and ive lost 1 kg in a week so its going great .

I cant wait to paint my new table /bench white ,it will look so good i think .
I wish some of the rain here would go to Iceland ,that would help alot with the ash,
some peoble in Kirkjubæjarklaustur have left there homes :/ and are staying with friends and family ,they say that it could turn into lava soon ,so then there wont be as much ash but it could stay like that for one or two months !!
