Garden picnik

Saturday and wonderful weather so what to do ? bake some after eight brownie and have a litle garden picnik with the kids.
Hubby gave me this cute litle/big cup and a plate to go with it ,he is so good to me :)
i also got some new spoons (can i love the any more ) this one says best friends
watermelons ,cupcakes with cream ,strawberry juice  and some fresh strawberry´s
the white box you see there under the cakes is a home made flower box i painted white
ok i dont really have time to blogg so im off ,cause i have a date to night with hubby and im gona enjoy the sun in the garden so have a wonderful weekend .

Miss cupcake

Hi and good morning to ya
ive been enjoying the great weather here in Norway ,sunny and so nice to sit out side with my coffee ,i did try to crochet yesterday just to find out that my hand is not ready for that ,my fingers are still very sore from the exident so i had to lay my hook down for the day .

Preikestolen

Hubby and me planned to hike up to the Preikestolen ,so we packed out litle backpack ,sandwich and lots to drink .So off we whent ,we where both very exited to go (left the kids home with the big girls)
its a very beautiful way to drive big mountains and trees grow all the way to the top .
The walk to is very steep in places and very rocky so it was a hard walk in some places and the hike
takes 1-3 hours depending on experience and fitness level.it took us 2 hours and we stopped and took pic´s and the you cant not stopp and look at the view on the way up.

We had such great weather not to hot but sunny ,so it was very nice to hike in that weather ,the only thing i was not happy with was the fog/mist or it was like there was white smoke in the air ,so that kinda blocked the view.

here is how some of the path is ,but this one is a good one haha not so hard hiking up that one

but here we have more difficulty thats more how the way up is like ,i saw one girl how had hurt her legg and they had to go back down so you better be careful whe you hike these paths.
There are litle lakes on the way up and this one was still bit frozen and we saw snow in some places :) reminded me of home .
ok after 2 hours we where finally there :) i was really tierd but we had to explore the rock a bit before we sat down and had out litle lunch ,there was alot of peoble there ,and peoble with kids (not something i would do ) and so many dogs to .


I did it .now i can do anything haha thats how i felt
Thats me laying there on the edge (not sure what my mom is gona say when she sees these pic´s)
it was a really really relly long way down,before we whent up we had both said hell no im not gona sit or lay on the edge thats just crazy peoble that do that ,but when i got up there ,i dint even think about not doing it ,after hiking for  2 hours you just have to take that look down .
im not saying i wasnt ´s sceard i was to beging with ,i had to crawl to the edge hehe but i did it and now im sure i can do almost anything .
Like i said i whant to go again and then i hope the mist or what ever it was isnt there ,its not so easy to get good pic´s in these conditions but that hike was so worth it ,and im still kinda sore after all that hike but it was a GOOD workout .

and thats something i would never in the world think i would do ,sit on that edge is really sceary but i did it ;) hehe .
and thats how far down it is ,its awsome dont you think .
and we have already planned the next hike ....... we are gona hike up to the Kjeragbolten
and thats even harder to hike .

Easter cupcake part 2

I did so many easter cupcakes so im posting them i 2 parts.
These are vanilla cupc with a litle lemmon in them ,and the icing is crisco (thats how i get the icing so white )
recipe for really white icing
1 cup crisco
3 table spoons or more if you need warm water
1 tsp clear vanilla extract (it has to be clear )
7 to 8 cups sifted confectioners' suga

combine crisco, water and vanilla in a mixer and mix well tog
then you start to add the sugar ,not all at the time ,if you think you dont need all the sugar then dont add it all at once ,i used 7 cups and added a litle more water so i would start with 5 to 6 cups and add more if you think you need it
and thats how you get really white icing
we had so much fun yesterday when whent for a walk in the woods looking for the bunny´s dint see any but found lots of birds and ants :/
i also found a huge cherry blossom tree ,and my daughter found this litle branch that somebody had taken of the tree and left it on a table ,so we took it home and are hoping to grow it but i need some help ,do i put it water and wait for litle roots and plant it in a pot then or what so if you know how to do that please tell me so i can give this litle branch its life back .
well today im doing something really fun and its only for grown ups so im leaving the kids with the oldest girls cause me and hubby are going to walk up to the  Preikestolen ,its a really hight place with this awesome view so my camera is going with us and im packing some lunch and my sneakers :) im so exited .so you will hopefully see some fun pic´s later .
so how do you like my version of easter cupcakes ? my brother said they should not be eaten hehe ,but they taste to good to just look at them and i can always make more .
can you tell that i love these cherry tree´s ? hehe im just in love with them

.Baked some easter cupcakes ,im not done decorating them yet ,this is just a sample :)
i still have some more flowers to use and some other stuff and i will show you that later ,im waiting for the fondant to dry a litle more
now im gona go and take a litle trip to see the easter bunny with my kids ,where gona go and look for the bunny in the woods so take care and have a good day .

Carnival

It was a wonderful day (yesterday) woke up with the sun in our eyes and it was warm and such a pretty day
We whanted to take the kids to the carnival and do something fun for them ,so off me whent and boy did they have fun ,its been a while since ive seen them smile like that :)warms my heart
then i saw the paris wheel and wow it was big and im really afraid of heights but i really whanted to see over Stavanger so i told my self you can do this and hubby said just go its no problem... hehe says he

at first i could not move (i still get sick to my stomack just thinking about it )but i had Hekla my 6 year old with me so i had keep the smile on so when she said im afraid i said no no its no problem its fun (omg im so afraid my self) then she was ok .
I got some pic´s and it was all worth the scear :) but im not sure i can do it again .
then we found some more rides for the kids and bougth some candy floss

and on the way home i saw this wonderful Cherry blossom tree and i love that tree ,its has the most beautiful flowers so i screamed stopp stopp i need to take a pic here hehe hubby was all eyes ,take pic´s off what ?
dont you just love it ? it has these gorgeous pink flowers on it ,and i really think i need to buy one for my self

Pixie dust


Ok ive been thinking about baking a cupcake for a Dr Oetker compatision but i need many likes if im gona do good ,so i thought and thought what kinda cupcake should i do ,and i just got all this wonderful stuff from ebay the other day ,litle pink pearls ,lustre dust and some flower plungers so thats what i whanted to use so i baked a vanilla cake with italian buttercream and cut out flowers and leaves and let them dry and then a dusted some pixie dust (since i like peter pan i call it pixie dust )
So this is what i ended up with and i have to say im happy about the resault ,it took me probably 2 days to make the fondant flowers and then bake the cake and then to decorate it but im glad i did it :)

Dessert

My daugther inveted her boyfriend to come and eat dinner with us ,so we had a litle barbeque and ofcourse i had to make us a litle dessert wich was hot brownie with cream and chocolate sause

it was very yummy ,and everyone was happy .
I have been working in my litle greenhouse all day (and some cleaning )bought some basill and some other herbs
and hubby was building some boxes for me wich im gona paint
i cant wait for the strawberry plant to grow me some gorgeous berries ummm

and when its hot outside i can sit in there and enjoy the sun ( i can open the greenhous on the side with slide doors ) its not very pretty but hey i still have a greenhouse and im gona make it as pretty as i can :)

Brownies

Friday :) i had a friend come over so i made some cakes for us and i had to try some of my new toys (flower plungers and other stuff) and i made some peanutt butter brownies oh my god they are good jammm jammm just like candy
so these have some kinda easter decoration ,i spent more time on making the leaves and the flowers then the cakes :) but i think it was worth the time and the chocolate cream is to die for (almost)
i used an egg tray to try out the flowers and the leaves and dusted some sparkle on the leaves (you cant really see from the pic´s) and this was so much to do and i still have loads of fondant left so i will be playing again with it .

Peanut butter brownies recipe

Makes 24 brownies.

I have used two patty cake pans with a 1/4 cup (water) capacity. Generously spray with non-stick baking spray or line with paper cases. Larger muffin pans can be used just be aware that you will make less brownies and need to bake them a little longer.

Ingredients.

125g butter, chopped
250g dark chocolate, chopped
1/2 cup brown sugar, firmly packed
2 eggs, lightly beaten,
1 1/4 cups plain flour, sifted
1 cup chocolate chips
1 cup peanut butter, smooth or crunchy you choose

Baking Temperature

The oven should be preheated to 160oC (325oF)

Method.

  1. In a medium size microwave safe bowl heat the chopped butter and dark chocolate on high for 1 minute. Remove and stir until blended. You may need a further 30 seconds. Stir until smooth. Cool slightly so that you do not cook the eggs when you add them.
  2. Add the brown sugar and the beaten eggs. Stir through.
  3. Add the sifted flour, chocolate chips and stir through until smooth.
  4. Using a small spoon dot small amounts of the peanut butter evenly across the surface of the brownie batter.
  5. Fold through the peanut butter gently. Do not over mix you are not blending it into the batter just mixing enough to give a swirled effect.
  6. Divide the brownie batter evenly into the patty cake pans. Using a small icecream scoop makes this quick and easy.
  7. Bake in a preheated oven set to 160oC (325oF) for 22 minutes.
  8. Remove from the oven and leave to cool in the tin for 10 minutes before removing to a cake rack to cool completely. If you have not use paper liners take great care, I usually use a flat knife to help lift them out.
  9. Store in an airtight container for one week. The brownies can be frozen for up to two months.

and the recipe dint have cream on it but i whanted to have cream so i used this one here
and i think this is the best chocolate cream recipe i have tasted


Chocolate frosting:
(makes 14 oz. (400 gram) frosting)
5 oz. (150 gram) unsalted soft butter
7 oz. (200 gram) confectioners sugar
1 oz. (30 gram) cocoa powder
2 tbsp milk lukewarm (start out with only 1 tbsp and see/taste if it need the last tbsp of milk)
1 tsp vanilla
How to make the frosting:
Cream butter and sift in the confectioners sugar and cocoa powder. Add the milk and vanilla. Mix untill well incorporated.
Note: If the frosting look a bit curdled try add a bit more confectioners sugar
Frosting

i would double this recipe if you whant to frost all the brownies 

 
I dont have anything planned for the rest of the day ,just do some laundry and stuff like that ,all the kids are starting there easter break from school so i guess i have plenty to do for the next couple of days

this cupcake is for a special someone :) my sweet hubby wich does everything for me
i asked him to build some boxes for my greenhouse and ofcourse he said yes no problem .
i cant wait to take pic´s of my litle plant growing and hopefully they will grow tomatos and strawberry´s
any idea´s what else i could grow ?

Peanut butter

I found this great recipe for peanut butter frosting and had to try is ,(one problem ) the P butter i found had peanut its in it so it was rather hard piping it in a good way (i wasnt happy with my piping ) so next time i have to find fine P butter
Anyway they taste very good, i used a recipe from a cupcake book my sister bought for me when she was in Florida its called Cupcakes by Shelly Kaldunsky and it is a very pretty book with loads of pic´s and wonderful recipes of cakes and frostings.
Im not gona write up the recipe for the chocolate cake but the frosting i got from the internet
so here is the recipe for the Peanut butter frosting 
Peanutt butter frosting 
Ingredients:
  • 1/2 cup Unsalted Butter
  • 1 cup Creamy Peanut Butter
  • 3 tablespoons Milk (or a little more as needed)
  • 2 cups Confectioner’s Sugar
Directions:
  • Place the butter and peanut butter in a medium bowl and blend with an electric mixer. (I use my KitchenAid mixer with the paddle attachment).
  • Gradually add the confectioner’s sugar to the butter/peanut butter mixture.
  • As mixture begins to thicken, gradually incorporate milk, one tablespoon at a time, until all of the sugar is mixed in and the frosting is smooth and spreadable. *If batter does not mix together or feels stiff, add a little more milk.
        Continue to mix ingredients for up to three minutes until the batter is fluffy and light
 dont you just love all the pink stuff :)i whent to Stavanger the other day and found these baby´s in the boxes i keep some of my food color and pearl dust and some flavoring oils i have .
So easter is around the corner and i have some ideas for easter cupcakes so you can get exited about that (i know i am )
i whanted to buy some pink flowers but the store only had yellow and some really expencive roses so since its easter time i got the yellow once .
