Chocolate cupcakes

I had this idea of filled caramel chocolate cupcakes with vanilla swiss mareng buttercream ,so i surfed the internet and found this and that and then to save time i made the homemade caramell last night and i just could not resist that delicious sause so i had some with icecream yummi it was heavenly

someone said this was the best chocolate cake ever ,and i have agree its very very tasty and soft ,but its not a cupcake recipe but i dint care about that and made cupcakes out of it ,and of course you should not bake it as long since its cupcakes and i baked them for 15 min at 180 C but you can make it like it says in the recipe that is in a larger baking form

So here is the recipe

The Best Chocolate Cake Ever

8oz self-raising flour (1 cup or 224 gr)
3tbsp cocoa
2tsp baking powder
8oz margarine (1 CUP OR 224 GR )
8oz caster sugar (1 cup or 224 gr )
4 eggs, beaten
10tbsp milk
Method:
Sieve the first three ingredients into a bowl (or processor bowl), then add the margarine, caster sugar, beaten eggs, and milk, and beat until combined.
Tip into two well-greased 8” round baking tins, and bake at 160 degrees C for about 50 minutes.
Test with a skewer – when it comes out of the cake clean, the cake is done.

then i just used a caramel sause recipe i found online as well (got to love that internet)and ive never made caramel saus and it whent so well that im never buying these store sauses again.


Salted Caramel
Ingredients
For the caramel:
1/2 cup sugar
2 tablespoons water
1/4 cup heavy cream
pinch sea salt
1.    Add the sugar to a small saucepan and pour the water over it. With the heat on low, swirl the pan around until the sugar has nearly dissolved. Be careful not to let it boil — if it starts getting too hot, remove it from the burner for a few seconds, continuing to swirl.
2.    Once the sugar has mostly dissolved, raise the heat to medium-high and bring the mixture to a boil. Cover it immediately and leave on boil for 2 minutes.
3.    Uncover and continue swirling the mixture until it becomes dark amber. (Be careful — you want it to be dark, but it can go from dark to burning in seconds.) Take it off the heat immediately.
Slowly pour in the cream, stirring with a whisk. Again, be careful as the caramel will start splattering, and will splatter even more if you add the cream too fast. Whisk until combined
I cut a litle hole in each cake and filled it with caramel saus and put the top back on

then its the Swiss mareng buttercream
that i got online like the rest
and i used this video Swiss mareng

its also fluffy and charming enough to convert the anti-chocolate cake league.

 




Well im of to do some more fun things ,its a wonderful day here in Sandnes Norway ,sun is shining birds are singing (sounds like a movie) but its just the way this day is going so i have a smile on my face and cant wait to go out and wait for the spring to jump on me .

Lemon buns

Teresa asked for the resipe for the buns so here it is

  • 1,4 dl warm milk
  • 3 table spoon soft butter
  • 50 g bread yeast
  • 1/4 ts. salt
  • 2 table spoons sugar
  • 4 table spoons. vanillapudding powder (i used almond pudding)
  • 1 large egg
  • 350 g flower
stir the butter in the warm the milk until melted add the ger and stir well together.
visp the egg in a small bowl

por the milk mix in a kitchen aid or what ever mixer you have then add the egg to that .
add the sugar ,pudding , salt and then 1/3 of the flower start mixing and adding the rest of the flower in litle by litle ,mix good until its starts to stick well togther ,its a litle sticky but it should be that way ,let the dough sit in a bowl with a clean cloth over for about 30 min.

lemon fylling
  •  25 g melted butter
  • 4 table sp. sugar
  • 2 peel of an lemon (not sure how to write that )
  • 1/2 lemon  juice
pensil the butter over the dough then add the peel of the lemon ,sugar and the  juice ,rol it up to a nice sausage ,cut the dough in 2 to 3 cm thick bites and but in a cupcake form and let them sit for about 30 min ,

the bake at 175 C  for 20 min

Philadeflia frosting:
  • 100 g philadelfia cheese
  • 4-5 table sp powdered sugar
  • 2-3 table sp lemon juice
mix all togther and por over the buns if you like

I whanted to make something for the kids to eat when they got home from school ,so i made these lemon buns with lemoncheese spread on it ,it tastes so good ,and the house is filled with this awesome smell ,i did put a litle mandel pudding in them and that makes the a litle softer i think .

The kids loved them ,is there something better then coming home from school and see hot buns waiting for you !!

18 years

Today is my first born daugther´s 18 year old birthday :) remember that day like it was this morning ,she is a wonderful daugther and good person
me and her litle brother baked her some chocolate mint cupcakes, créme de menth to have it correct swirld with swiss buttercream with a litle green color in im sure she will love them .
I had to display them in my way using my old coffee cup and some green ribbon (just to have fun with this )

Im on track with my flowerbed ,but its gona be a litle busy week ,doctor and so on ,but i need to keep on hooking those flowers :) i do maby one or two these days ,not that much but a litle goes a long way right .

White chocolate

I whanted to make cupcakes with white chocolate frosting ,it was super easy and fun to make ,tastes even better then it looks ,made cupcakes with icecream in ,even better yes .....
not sure what i whant to bake next !!! but sure i will find something i like .Now im gona run out and buy some shoes for one of the kids ,the sun is shining and the snow will melt soon :) oh and im out of yarn for the flowered blanket so i need to get me some more of that.

I heart you

Woke up and it was snowing like crazy this morning (is this never gona end) and as im writing this is starting to snow again :/ i think im gona have a fab summer since this is gona be like this ,it should be getting warmer soon i hope and the snow will go and i will see green gras again and the flowers starting to bloom :)
well since i wasnt going to go out much this morning i thought i would bake bread for the kids ,simple but good and to make it more fun i used the heart cookie cutter <3
yeh and more fun i got my new wilton tip this morning as well so im gona bake cupcakes and make roses like they should be made (lets hope it goes well )

Snowing

Well i had the impresson that the spring was just around the corner but no sir mr winter i aint done yet ,it started to snow a litle last night ,i whent to a litle ladys meeting in Figgjo Skjöldur Eyfjörð came and was telling us all about makeup and stuff reagarding makeup it was so much fun and im already on ebay buying some makeup stuff .

But when i woke up this morning at 7 it started to snow more and more and more ........ ***** oh no and i need to walk  down town in this snow with all the kids (they have winter break from school ) lord help me :) i really need some sunshine here my brain is snowbound ,not doing much hooking or anything else but run around the house picking up toys and stuff after them LOL.

anyways these pic´s i took this morning after the kids ran out to play (and filled the postbox with snow)
